Homemade Almond Milk

Have I mentioned how much I love my Vitamix? 🙂 I made this fresh, pure white almond milk in less than 1 minute for about $2. Isn’t it gorgeous?

First take 1 cup of raw almonds that have been soaked overnight and put them in the Vitamix with 3 cups of water. Soaking the almonds removes the tannins from the skin, improves the flavor, and makes it so the body more easily abosorbs the calcium. Make sure to drain off the soaking water and rinse the almonds well before using.

Now run the Vitamix on high for 45 seconds.

Now pour into a nutmilk bag, cheesecloth, or even a pillowcase and strain through into a bowl. Take your time squeezing, twisting the bag down as you go, and get all that awesome almond milk out.

At this point, if you’re going to use the almond milk in recipes, to pour over cereal or granola, or to wash down a rich brownie, you can leave it as is and refrigerate. If you want to make a nice, refreshing drink, you can pour the strained milk back into the Vitamix and blend up with 1/3-1/2 cup soaked dates and a couple dashes of cinnamon. I’d even add in 1/2 teaspoon or so of vanilla or the seeds of a vanilla bean pod.

Save the blended almondmeal that’s in the nutmilk bag and use it in smoothies or as almond flour in cookies and baked goods.
